Easy Homemade Tortillas and Cool Salsa

Whether you're having this as a simple snack or an easy light lunch, these homemade tortillas and cool salsa will hit the spot!

Serves 1
For this recipe you will need:
For the Tortillas:
2 white flour wraps (I use Weight Watchers)
1 tbsp smoked paprika
1 tsp cracked black pepper
Light oil (I use Fry Light but you can use extra virgin olive oil)
For the salsa:
1/2 red bell pepper
1/2 red onion
1 tsp all purpose seasoning
1 tbsp chipotle sauce
1/2 can of chopped tomatoes (or 1 cup chopped fresh tomatoes)
1 small bunch of fresh parsley
Method:
For the Tortillas:
1) Preheat your oven to 180°C.
2) Take your wraps and slice each one into small triangles - I usually end up with 36 triangles.
3) Place the triangles onto a baking tray, spray a little light oil over top, and coat in your paprika and black pepper.
4) Place the tray into the oven and cook for 15-20 minutes, or until they are golden brown.
For the salsa:
1) Roughly chop your red onion and bell pepper.
2) Place your chopped vegetables into a frying pan and start to cook on a medium heat.
3) Cook part way, turn down the heat to low and add your chopped tomatoes.
4) Add your all purpose seasoning and chipotle sauce.
5) Allow to cool and serve with fresh parsley.
