Sticky Teriyaki Chicken Skewers

These Japanese inspired healthy sticky skewers are sure to be a crowd pleaser at your next socially-distanced family gathering!

Serves 1
For this recipe you will need:
1 chicken breast
1/2 red bell pepper
1/2 red onion
Sesame seeds
2 tbsp teriyaki sauce (I use Wicked Kitchen, Wicked Sticky Teriyaki Sauce)
Some wooden skewers
Method:
To make sure that your skewers don't splinter, soak them in some warm water for at least 15 minutes.
1) Preheat your oven to 180°C.
2) Roughly chop your bell pepper and onion into medium/large chunks.
3) Slice your chicken into similar sized chunks as your vegetables.
4) Toss your chicken in the teriyaki sauce (for more flavour, marinate the chicken the sauce the night before).
5) Take your wooden skewers and start loading them up, alternating between vegetables and chicken until all your ingredients have been used up.
6) Take a baking tray that is slightly smaller than the length of your skewers. This means that when you plate the skewers on, they will float above the bottom of the tray.
7) Sprinkle over some sesame seeds.
8) Place in the oven for 15-20 minutes, or until the chicken is golden brown.
