Chicken Vegetable Stew

This stew is guaranteed to warm both your stomach and your heart this autumn!

Serves 2
For this recipe you will need:
1 tablespoon tomato puree
1 vegetable stock cube
2 medium potatoes
Half a broccoli head
4 carrots
1 large leak
1 teaspoon garlic granules
1 teaspoon thyme
1 teaspoon dried sage
2 chicken breasts
Extra virgin olive oil
2 pints of water
Cracked black pepper to taste
Method:
1) Take a large saucepan, place it on a medium/high heat and pour in a little extra virgin olive oil.
2) Slice your chicken breasts and add them to the bottom of the saucepan to start cooking them.
3) Slice your leaks into large chunks and add them in with the chicken.
4) Toss the chicken and leaks back and forth for a couple of minutes then add the water.
5) Chop your potatoes, carrots and broccoli into large chunks and add them to the water.
6) Once the water is boiling, add the tomato puree, stock cube, garlic granules, thyme and sage, and cover with a lid.
7) Leave to simmer for 15-20 minutes.
8) Once the vegetables are soft, top the stew with black pepper and serve!
