Teriyaki Chicken Dumplings

Making dumplings from scratch can always feel a little daunting. But, in a world filled with hundreds of dumpling recipes, from dozens of cultures, you can always find at least one easy recipe to put your own personal spin on!
This teriyaki chicken dumpling recipe is my simple, healthy take on a classic!
Makes 12 Dumplings
For this recipe you will need:
2 cups plain flour
1 teaspoon salt
2/3 cup warm water
1 chicken breast
3 spring onions
1 carrot
3 tablespoons teriyaki sauce
1 red bell pepper
Sesame oil
Method:
The Dumpling Wrappers
In a bowl, mix your flour, salt and warm water until well-combined.
Once combined, roll out your dough on a floured surface and begin to knead.
Once the dough is smooth, roll it out into a log and divide into 12 equal balls.
Lightly flour the small dough balls and roll out each piece into a thin circle, about 4-inches wide.
Keep your dumpling wrappers separated while you make your filling by placing a small piece of parchment paper between each one.
The Dumpling Filling
In a large bowl, roughly chop your raw chicken breast into small pieces.
Take your bell pepper and spring onions, finely slice them, and add them to the chicken.
Next, peel and shred your carrot, then add it to the chicken mixture.
Pour over 3 tablespoons of teriyaki sauce and mix until well-combined.
Stuffing The Dumplings
Place one of your pre-made dumpling wrappers into your palm.
Spoon 1-2 teaspoons of filling into the middle of the wrapper.
Using your finger, spread a small amount of water over one half of the dumpling wrapper - this will act as a glue to hold the dumpling together.
Take the other half of the wrapper and fold it over to meet the sticky half - before placing it down to secure it, begin pinching/pleating the outer edge to create small folds.
Repeat steps 1-4 until you have run out of mixture and wrappers.
Cooking The Dumplings
Pour 1 tablespoon of sesame oil into a large pan and heat over a medium/high heat.
Once the oil is hot, add a few dumplings, cooking them in batches.
After 2-3 minutes the bottoms of the dumplings will start to brown, once this happens, add a splash of water and cover with a lid.
Steam the dumplings on a medium heat for about 5 minutes, or until the dumplings are cooked and the water has evaporated.
Once the batch is cooked, place the dumplings onto a paper towel-lined plate to remove any excess water or oil.
Pair with a dipping soy sauce or vegetable fried rice and enjoy!
