Turkey Taco Bowls

Crispy. Crunchy. Smokey. Spicy. It's another #TacoTuesday recipe to brighten the faces of your family this week!

Serves 1


For this recipe you will need:

2 white flour wraps (I use Weight Watchers)

100g of turkey mince meat (under 5% fat)

1/2 a red or yellow bell pepper

1/2 red onion

1/2 packet of chilli seasoning (I use Old El Paso Smokey BBQ)

1/2 can of canned tomatoes

2 lime wedges

A small bunch of cilantro or parsley

Method:


For the tortilla bowls:

1) Preheat your oven to 180°C.

2) Take your white flour wraps and push each one into an medium/large oven-safe bowl (this will act as a mould).

3) Put the wraps into the preheated oven and cook for 10-15 minutes or until they are crisp and golden brown.

4) Remove and cool whilst your chilli is cooking.

For the chilli:

1) Dice the bell pepper and onion (leave a table spoon of each uncooked to top the bowls with)

2) Place in a heated frying pan with some light fry spray or extra virgin olive oil and cook through on a medium/high heat.

3) Push the vegetables to one side of the frying pan and add the turkey mince.

4) Break apart and cook the turkey mince (it will be completely white when cooked).

5) Add the canned tomatoes and chilli seasoning and reduce the heat to low.

6) Mix and simmer until the sauce bubbles.


The finishing touches:

Now it's time to put everything together!

1) Take your baked wrap bowls and start to fill them with your chilli mix.

2) Once the bowls have an equal amount of chilli filling, top them with the left over peppers and onions we put aside in the chilli method, a few sprigs of cilantro and a lime wedge.

3) Dig in!
