Loaded Chilli Cheese Fries

During your weight loss journey, you don't need to give up all of your favourite comfort foods. Case and point, these loaded chilli cheese fries have only 3.3g of fat in each serving!

Serves 1

For this recipe you will need:

100g of turkey mince meat (under 5% fat)

1/2 a red bell pepper

1/2 red onion

1/2 packet of chilli seasoning (I use Old El Paso Smokey BBQ)

1/2 can of canned tomatoes

A small bunch of fresh parsley

1 large yellow potato

Handful of light grated cheese

Method:


For the chips -

1) Pre-heat your oven to 180°C

2) Slice your potatoes into thick-cut chips (leaving the skins on).

3) Place your chips onto a baking tray and spray with low kcal oil.

4) Place the tray into the oven and cook for 20-25 mins - they should be golden brown when done.


For the chilli:

1) Dice the bell pepper and onion into medium/small cubes.

2) Place in a heated frying pan with some light fry spray or extra virgin olive oil and cook through on a medium/high heat.

3) Push the vegetables to one side of the frying pan and add the turkey mince.

4) Break apart and cook the turkey mince (it will be completely white when cooked).

5) Add the canned tomatoes and chilli seasoning and reduce the heat to low.

6) Mix and simmer until the sauce bubbles.


Finishing touches:

1) Take your homemade chips and place them into a small, oven-proof dish.

2) Top the chips with your chilli mixture.

3) Sprinkle over your light grated cheese and place in the oven at 180°C until the cheese melts.

4) Serve with fresh parsley over top!
