Chocolate Coconut Protein Pancakes

Protein pancakes might not be anything new, but learning when you should and shouldn't eat them in your weight loss journey is important.


Protein is used by the body after exercise to help rebuild your muscles. If you are not doing intense exercise, the addition of protein powder could actually make you gain weight.


If you're at the stage in your journey when you can incorporate protein powder, take a look at this simple pancake recipe!

Serves 2

For this recipe you will need:

2 egg whites

1 cup plain flour

1 tsp baking powder (heaped)

2 cups of your preferred protein powder (for this recipe I used Women's Best Chocolate Coconut Sensation)

2 cups skimmed milk

1 cup water

Method:

1) In a mixing bowl, combine the egg whites, plain flour, baking powder, protein powder and milk.

2) Slowly mix in the water until your mixture is pourable but still thick (add more if needed).

3) Take a frying pan and add a tsp of coconut oil (or your preferred oil), and heat over a medium heat (on my hob I use stage 6).

4) Take a 1/3 cup of pancake mixture and pour it onto your heated pan. Repeat this two more times until you have 3 puddles of pancake mixture in your pan.

5) Place a lid over your pan to allow the pancakes to cook through.

6) After a minute or two the pancakes should be bubbling and solidifying, when this happens, flip them and cover again with the lid.

7) After another minute, the pancakes should be golden and good to go!

8) Repeat steps 3-7 until you run out of mixture.

9) Serve with your choice of toppings (I like honey, strawberries and banana)!
