Blueberry Oat Bars

If you're anything like me, a blueberry muffin everyday for breakfast would be a dream! Since that doesn't exactly fit in with a healthy balanced lifestyle, why not try these blueberry oat bars!

Makes 4
For this recipe you will need:
80g rolled oats
150ml skimmed milk (or milk alternative)
1 banana (and extra for serving)
Handful of blueberries
1tsp raw honey
Method:
1) Pre-heat the oven to 180°c
2) In a bowl, mash the banana.
3) Add the oats, milk and honey and mix until all the oats are covered.
4) Let sit for 5-10 mins for the oats to soak up some of the liquid.
5) Pour the oat mixture into a baking tray (make sure that the tray you use allows the bars to be about 2cm thick).
6) Place the blueberries onto the oat mixture and push them down.
8) Place in the oven for 25-20 mins (the sides should start to brown).
9) Allow to cool slightly before cutting and serving.
