Curried Chicken Skewers and Garlic Flatbread

This Indian/Mediterranean inspired dish is sure to be a crowd pleaser in your family!


Serves 1
For this recipe you will need:
For the flatbread:
Plain flour 100g
Warm water 50 ml
Melted butter 1 tbsp
Baking powder 1/2 tsp
1 tsp garlic granules
1 tsp butter (light) to spread
For the skewers:
1 breast of chicken
1 bell pepper
1 red onion
Tikka Masala sauce (1/4 jar)
1-3 wooden skewers
Method:
1) Begin by prepping the bell pepper, onion and chicken by slicing each into large cubes.
2) Take your wooden skewers (make sure that you soak them in water first to avoid splintering) and start sliding your meat and vegetables on.
3) Alternate between your meat, peppers and onions until your skewers are full.
4) Spoon your Tikka Masala sauce over top of all the skewers (you can marinate your chicken over night if you prefer).
5) Preheat your oven too 180°C.
6) Place your skewers onto a tray lined with baking paper (or place on a grill).
6) Cook at for 15-20 mins (10-15 on a grill)
For the flatbread:
1) In a bowl combine the dry ingredients.
2) In the same bowl add the wet ingredients.
3) Mix until a stiff dough begins to form.
4) Tip your dough onto a floured surface and begin to kneed.
5) Kneed the dough for 5 minutes.
6) Divide the dough into 3 equal pieces.
7) Take each piece and begin to roll them out into small circles. They should be around 2-3mm thick.
8) On the hob, heat a pan with oil.
9) Once the pan is heated, place one dough circle on it and cook for 1-2 mins on each side (they should bubble in the middle).
10) Repeat step 9 on all pieces of dough.
11) Serve them with a small spread of butter, a sprinkling of garlic granules and some parsley.
