BBQ Turkey Chilli and Tortillas

I absolutely love adding an alternative healthy spin on classic Mexican dishes, and this recipe is no different! By using turkey mince meat and creating your tortillas from flour wraps, the whole meal becomes instantly lighter.

Serves 1
For this recipe you will need:
For the Tortillas:
2 white flour wraps (I use Weight Watchers)
1 tbsp smoked paprika
1 tsp cracked black pepper
Light oil (I use Fry Light)
For the chilli:
100g of turkey mince meat (under 5% fat)
1/2 a red or yellow bell pepper
1/2 red onion
1/2 packet of chilli seasoning (I use Old El Paso Smokey BBQ)
1/2 can of canned tomatoes
Method:
For the Tortillas:
1) Preheat your oven to 180°C.
2) Take your wraps and slice each one into small triangles - I usually end up with 36 triangles.
3) Place the triangles onto a baking tray, spray a little light oil over top, and coat in your paprika and black pepper.
4) Place the tray into the oven and cook for 15-20 minutes, or until they are golden brown.
For the chilli:
1) Dice the bell pepper and onion.
2) Place in a frying pan with some light fry spray or coconut oil and cook through.
3) Push the vegetables to one side of the frying pan and add the turkey mince.
4) Break apart and cook the turkey mince (it will be completely white when cooked).
5) Add the canned tomatoes and chilli seasoning.
6) Mix until the sauce bubbles.
